The ingredients for this tomato beef stew are as simple as they are delicious.
Unlike traditional goulash, ingredients like starchy root vegetables and flour are replaced with low-carb alternatives like radishes, scallions, and a handful of carrots. You’ll barely notice the difference!
- Beef Stew – Use beef chuck roasts or round roasts and cut them into bite-sized pieces for stews. You can also buy pre-cut stews. I prefer grass fed beef, but use whatever fits within your own budget.
- olive oil – A light oil used to brown meat and sauté vegetables.
- green onions – Use the whole spring, including the white part. Green onions contain fewer carbohydrates than bulb onions.
- garlic – Pre-shredded or shredded at home.
- vegetable – Use radishes instead of potatoes, only one carrot is needed.
- seasoning – Italian seasoning, bay leaves, salt and pepper are all required.
- beef soup – If buying or making your own instant beef bone broth is in your budget, this is a great opportunity to use beef bone broth!
- ketchup – Adds a delicious tomato flavor to stews. It also helps stews thicken as they simmer.
- apple cider vinegar – Adds a little kick to really bring all the flavors together.

Making this hearty keto beef stew is an easy process.
Start by preparing the meat and vegetables. You will need to peel and chop all vegetables ahead of time except radishes.
The radish is added at the end when the stew is done. I recommend waiting to prepare them until the end so they don’t turn brown.
Heat olive oil in a large pot or Dutch oven over medium-high heat. Then, add the beef stew, browning on all sides, about 5-7 minutes. Remove beef from pan and set aside.
Next, add the white parts of the carrots and scallions to the pan and sauté until the vegetables are tender, about 5-7 minutes. Then add Italian seasoning, salt, pepper and garlic. Saute until fragrant, about 1 minute.
Add tomato paste, beef broth and bay leaves. Stir to combine.Allow the stew to boil, then cover, reduce heat to low and simmer for 45-60 minutes, until the beef is tender
Peel radishes and cut into 1-inch cubes. Remove lid from pot. Add radishes. Increase to medium-high and bring back to a boil. Boil for 15-20 minutes or until the radishes are tender and the stew begins to thicken.
Remove the stew from the heat and top with the remaining onions. This will add flavor and color to your stew.
hint: Brown the stew in batches so the meat doesn’t crowd the pan. This will give the meat enough room to crisp without releasing all the juices and just bringing it to a boil.
