This post proves that I walk the talk. So, back to my practice what I preach…this is the time of year when sockeye salmon run (June-July). We made the most of this fresh salmon season and bought a piece of sockeye. My favorite way to cook salmon is when my husband makes it on the grill. My man’s baked salmon recipe/how-to definitely deserves to be a Friday favorite and our dinner should definitely be on your weekend menu. Our side dish was inspired by a Memorial Day dinner we had at my cousin Erin’s lovely home, and she hosted us effortlessly, with grilled salmon and chicken on the menu. Looks like the family’s love for salmon never stops :). It was so good, I followed her recipe and served our grilled salmon with coconut rice, grilled zucchini, and tomato and cucumber salad, I have to write a blog and post it soon (you can do this until I get new of) one completed). Heledos Mexican popsicles and watermelon for dessert, the hostess made it look so easy, which made this dinner just perfect. Erin, I love you!
By the way, today is my baby Smudge’s 19th birthday! I can’t wait for her to come home from Asia in two weeks so we can celebrate together! !
